Last tasted from magnum. Orangey, pink colour. Tawny nose of strawberries and roses. Rich, full and fruity on the palate which went well with three very diverse canapés involving salmon, air-dried Grison meat and foie gras. That is the beauty of top pink Champagne - it has the body to put up a fight! Again from magnum in 2008, it had such gravitas and was all smoky, truffley pleasure with a marvellous dish from Les Quatre Saisons in Basel - grilled langoustine on gazpacho and rabbit in Sherry vinegar with peas.
