When the Shapira Brothers founded the Heaven Hill distillery in Bardstown soon after the end of Prohibition, they named it for the 18th century owner of a nearby farm, William Heavenhill. As the story goes, when the master distiller, Joseph Beam, went to register the facility, he accidentally rendered the name as two works, Heaven Hill, and the Shapiras decided that was good enough.


To mark what would have been his 225th birthday in 2008, Heaven Hill honored Mr. Heavenhill by creating a very limited brand in his name, one available in small releases exclusively at its gift shops in in Bardstown and Louisville. The first release, called Signature (LOTS #424-#427), was 18 years old (225 months) and comprised just 225 bottles – a true unicorn bottle. The release was so successful that the distillery rushed out a second release of 175 bottles, and later made decided to make it an ongoing, if irregular, series.


Unlike another Heaven Hill limited-release brand, Parker’s Heritage, which varies from batch to batch across mashbills and finishes, William Heavenhill releases use the same bourbon mash bill and are never finished; instead, they vary in age, proof and warehouse location, an approach that Heaven Hill says allows its distillers to show off their skills. It also demonstrates how much the warehouse – and location within a warehouse – can affect a whiskey. Most of them are blends of very small batches, no more than three dozen barrels. Among the notable variations are the 4th edition (LOTS #435-#439), aged for 15 years in 65-gallon (instead of 53-gallon) barrels and released at cask strength, and the 5th edition (LOT #434), offered at 115 105.4 proof as a single-barrel bottling.
