In tribute to the Worshipful Company of Distillers, Holyrood Distillery has propagated a yeast strain from the 17th century, the founding century of the Company. Tapping into Holyrood’s focus on brewing’s role within distilling, a 400-year-old sourdough yeast strain from Munich was paired with Distiller’s Yeast and Holyrood’s own house ale yeast to create a distillate of unique provenance. The spirit has been filled into a Spanish oak first-fill Oloroso sherry hogshead

10 years maturation included. Bottling costs and duty not included. Cask can not be sold onto a third party without written permission from Holyrood.
