Edy Legrand est tout d'abord influencé par les peintres italiens, Masaccio, les Primitifs, ou encore Piero della Francesca. Il s'intéresse ensuite à la couleur après l'étude des oeuvres du Greco, de Tintoret, Delacroix, Renoir.
Il découvre l'Orient avec un premier voyage en Algérie en 1923, suivi d'un voyage au Maroc. En 1933, il rencontre Jacques Majorelle à Marrakech avec qui il se lie d'amitié. Les deux artistes travaillent de temps en temps dans le même atelier.
A la suite d'une exposition à la Galerie Derche de Casablanca, un article d'Henri Bosco dans le journal de Rabat résume ainsi la peinture d'Edy Legrand: "l'homme et son oeuvre sont inséparables ; la psychologie de l'homme explique l'oeuvre, non seulement en ce qui concerne l'inspiration, mais encore la technique."
